3 healthy holiday recipes

These three healthy appetizer recipes are perfect to share at holiday parties. All of them are part of a good adrenal fatigue diet, in which small changes can make dramatic differences.

Classic-ish Deviled Eggs recipe

(4 servings)

Ingredients

6 hard cooked eggs, halved, yolks removed
¼ C Greek yogurt
2 tsp Dijon mustard
1 tsp fresh tarragon, chopped
Salt and pepper to taste

Directions

  • Use a fork or whisk and break up the yolks in a medium sized bowl.
  • Add yogurt, mustard and tarragon. Season with salt and pepper, and combine well.
  • Spoon mixture back into egg white halves.

Dress your deviled eggs up with a range of garnishes including red beet sprouts, olives, herbs or radish slices.

Creamy Spinach Dip recipe

(6 servings)

Ingredients

1¼ C ricotta cheese (approximately 10 oz)
10-12 oz spinach, fresh or frozen (if using frozen, thaw and drain very well)
2 Tbsp onion, minced
1 clove garlic, minced
1 tsp lemon juice
¼ C parmesan cheese, grated
¼ C red pepper, diced small
Salt and pepper to taste

Directions

  • Put ricotta and spinach in food processor and pulse until combined.
  • Put ricotta mixture in medium bowl and fold in all other ingredients.

This recipe can also be served warm by simply putting the mixture in a baking dish and cooking at 350 degrees F until heated through.

Guacamole recipe

(5 servings)

Ingredients

1 ripe Haas avocado – peeled, pitted and halved
1 lime
1/8 tsp cumin, ground
½ small onion, diced
1 Roma tomato, diced
Cilantro, chopped, to taste
Salt and pepper to taste

Directions

  • Squeeze just enough lime juice over avocado halves to coat.
  • Using potato masher (for chunky texture) or food processor (for smooth texture) mash/process the avocado until desired texture.
  • Fold in other ingredients and season with salt and pepper. Add additional lime juice if necessary.
