Try this low-carb Eggplant Lasagna with Meat Sauce recipe

This eggplant lasagna can be part of a health Mediterranean Diet


1 large eggplant, cut lengthwise into 1/3” slices
2-3 Tbsp olive or other oil
1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 14-oz can diced tomatoes
1 tsp each dried Italian herbs, such as basil, oregano, thyme, marjoram
Salt and pepper to taste
Pinch of nutmeg
1 tsp sweetener


Preheat oven to 350 degrees F. Brush eggplant slices with 1-2 Tbsp oil and placeon cookie sheet. Roast until tender, about 30 minutes.

Meanwhile, sauté onion, garlic and herbs in remaining oil. Add beef, stirring, andcook until no longer pink. Add tomatoes, salt, pepper and nutmeg and simmer (addingmore herbs and a little sweetener if needed).

Quick option: serve eggplant slices topped with meat sauce. Addone more slice of eggplant on top if desired, to create a slightly layered effect.

You can also assemble the eggplant and sauce in layers in an oiled pan and bakean additional 20 minutes.
